приведет к тому, что весь выделенный раздел (ы) будет окружен нажатой клавишей (или ее соответствующим символом). Есть ли возможность добавить больше символов в этот список? Я бы довольно часто использовал | и `в разработке Ruby.

Как это происходит, я уже настроил привязки клавиш для обратных символов (`), поэтому изменил их для каналов | должно быть легко. Для этого откройте Preferences -> Key Bindings-User. Если файл пуст, добавьте открывающие и закрывающие квадратные скобки [] в отдельных строках и вставьте между ними следующее:
